LAF-TRIO is a selected blend of yeast strains with origins in traditional French cheesemaking. SWING® LAF TRIO has been specifically developed for its ability to prevent the growth of contaminants on the cheese surface. The synergistic effect of the strains helps inhibit unwanted moulds such as Penicillium (blue moulds) and Mucor, supporting consistent rind development and improved cheese quality.
