HOLDBAC® YM-B PLUS LYO 500 DCU is a protective culture with very slow and low acidification, primarily forming lactic acid of the L(+) type, as well as acetic and propionic acids. Small amounts of other acids and diacetyl are also produced.
This culture is added alongside acidifying cultures and can enhance both the texture and flavour of fermented products.
HOLDBAC® YM-B PLUS has been shown to support product freshness throughout shelf life and may help reduce the development of off-flavours during storage and transport.
It inhibits undesired microorganisms, such as yeasts and moulds, through a natural biological mechanism. The efficacy of inhibition depends on the strain and species present, as well as the extent of contamination.
