CHY-MAX® Extra NB is a pure chymosin coagulant produced via submerged fermentation on a vegetable substrate using Aspergillus niger var. awamori under contained conditions. The production organism is not present in the final product. This highly specific milk-clotting enzyme targets kappa-casein to deliver excellent curd formation, optimal yield, and consistent cheesemaking results.
The “NB” designation indicates the formulation contains no added benzoate, making it well-suited for clean-label and specialty cheese applications.
