Ricotta
Ricotta is a traditional Italian cheese whose name means “re-cooked.” Unlike most cheeses, ricotta is made from whey — the liquid left over from making other cheeses. The whey is gently reheated, allowing the remaining proteins to coagulate and form soft, delicate curds that are then skimmed off and drained.
Ricotta has a fresh, mild and slightly sweet flavour with a soft, light texture. It can be enjoyed fresh on its own, used in pasta dishes such as lasagne and ravioli, added to baked goods, or incorporated into desserts.
