Sigma 30 is a Saccharomyces cerevisiae yeast culture developed for direct inoculation into cheesemilk to enhance paste opening and support the development of acid-sensitive flora. It plays a key role in de-acidification and gas production, improving the structure and texture of blue cheeses and varieties with spotty pastes. Sigma 30 also contributes to flavour development through its lipolytic and proteolytic activity, with strong salt resistance and optimal performance between 25–35 °C and pH >5.2. For direct inoculation into cheesemilk at a rate of one vial per 150 litres.
