Also known as Quark, this cheese is soft, spreadable, and often described as a cross between yogurt and cottage cheese. Originating from Eastern Europe and German-speaking countries, Quark is made from warmed, soured milk, and the traditional version doesn’t require rennet.

Quark should have a snow-white colour, a creamy and smooth texture, and a subtle flavour reminiscent of sour cream.
