Each Wrap has 2 layers per sheet, one being the Glossy White side with Micro-perforations that allow the cheese to breath and not dry out during the Maturation and storing processes.
The other layer being the Dull white side. This is the side that comes into contact with the cheese. This side will absorb any excess moisture.
