SWING® LAF-3 10U is a selected yeast single-strain culture with origins in traditional French cheesemaking. SWING® LAF cultures are an important tool in cheese production, as they can influence curd neutralisation, texture, and flavour. While yeasts are common in traditional raw milk cheeses, they are rarely found in industrially produced varieties. The addition of selected and controlled yeast cultures such as LAF-3 can therefore improve overall quality, delivering more authentic flavour and texture characteristics.
