YO-MIX 495 LYO 250 DCU offers an extra mild flavour and high thickness. YO-MIX 495 gives quick acidification to pH 4.70 -4.60 and then a slow acidification to reach lower pH. This characteristic allows an exceptional pH stabilisation during the end of fermentation time and shelf life.
